Mincemeat and another excuse to be Christmassy

This was supposed to be part of the previous post but the photos wouldn’t sit right, so I’m having another go now!

I had an unexpectedly free day today so I made mincemeat, which I’ll use both for myself and to give as gifts.  I’ve been making this for years now, it’s so easy and yummy, and I use Delia Smith’s recipe.  You just put all the ingredients in a bowl and mix them all thoroughly together.

     
It has spices and citrus zests in and just the smell of it makes me feel excited!  Tomorrow morning I’ll put it into a very cool oven (110 C) for 3 hours.  This melts the suet very gently and, when it has melted, stirring it again will coat all the fruit in the fat as it cools, sealing in the juices which sometimes ferment and make the mincemeat go mouldy.  In the meantime it needs to steep overnight, so I’ve covered it in a tea-towel which just happens to be a Christmas one which sneaked out of the drawer (it seemed appropriate)!
